We operate with a zero-waste mentality. Participating in a local cry-concentrated apple juice project; recycling bread waste into sourdough gochujang; contract farming to grow heirloom wheat for flour on organic, regeneratively farmed land. When you’re here you can experience our on-site pollinator garden and take note of the certified sustainable foraging programs that are used to source ingredients in many of our dishes.
