As the Director of Fermentation and Sustainability at Id Est, Mara brings her expertise to the forefront, overseeing fermentation processes.

Erika Whitaker, a Colorado State University graduate, began her restaurant journey after graduation, aiding a famous chef in opening a restaurant in Lafayette, CO. She later managed operations at ECO IMPACT and led Environmental Programs at American Apparel, fostering a passion for sustainable practices. Co-founding IEHG and a decade of leadership have led her to excel in visual merchandising, shaping the restaurant's aesthetic with her remarkable work.

With a decade as a valuable member of the Id Est team, Caroline has discovered the transformative power of good food, drinks, and hospitality on a global scale. As the Director of Beverage & Hospitality, Caroline's focus is on curating thoughtful wine and beverage programs that enhance the culinary narratives of our chefs while supporting environmentally conscious producers.

With experience in every role from back of house to front of house, she has steadily progressed into leadership positions, culminating in her current role as Director of Communications and Projects at Id Est.
